Easy Blackberry Cobbler

This easy cobbler is sure to impress your guests. To make it even tastier, top it with vanilla ice cream or whipped cream while it’s still warm.

Easy Blackberry Cobbler
Ingredients:
4 c. fresh blackberries or raspberries
1 T. cornstarch
1 c. sugar
½ tsp. lemon juice
1 c. flour
2 tsp. baking powder
½ tsp. salt
½ c. milk
¼ c. butter, melted
1 egg
Directions:
Preheat oven to 375° F. Spread blackberries in ungreased 2-qt. casserole dish. Reserve 1 teaspoon of sugar; mix remaining sugar, cornstarch and lemon juice. Drizzle the cornstarch mixture over the blackberries; stir gently.
Combine flour, baking powder and salt in a medium bowl. Stir in milk, butter and egg. Spread the batter evenly over the blackberries, sealing the edge. Sprinkle with reserved 1 teaspoon of sugar. Bake 30-35 minutes or until topping is golden brown. Let stand for 10 minutes before serving. Serves 4.
