Mango Salad
Lite and fresh salad or topping.
Ingredients:
2 tsp. fresh lemon juice
2 tsp. balsamic vinegar
1 tsp. sugar
½ tsp. salt
¼ tsp. black pepper
3 Tbsp. extra-virgin olive oil
1 large firm-ripe mango, peeled and cubed
1 large tomato, cubed
1 small red onion, thinly sliced
1/3 cup fresh cilantro
Directions:
In a medium bowl, whisk together lemon juice, balsamic vinegar, sugar, salt and pepper until sugar is completely dissolved. Add oil, continuing to whisk until emulsified. Mix in remaining ingredients, tossing gently.
Serve separately as a salad, or use as a topping on poultry or fish. Makes four servings.
