Garlic Mashed Potatoes

Roasted garlic + mashed potatoes = bliss.

Ingredients:
3 garlic bulbs
2 Tbsp. olive oil
2½ lbs. baking potatoes
4 Tbsp. butter
1 cup whole milk, warmed
Salt and pepper to taste

Directions:
Prepare the garlic in the oven: Remove the outer papery covering. Slice ¼-inch off the top of the garlic bulb, exposing most of the cloves. Place in a small baking dish and drizzle with olive oil. Cover with foil and roast at 425 degrees for about 45 minutes, or until garlic cloves are soft. Squeeze cooled garlic cloves into a bowl.

Peel and quarter potatoes and place in a pot of salted water. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes. Remove from heat and drain. Return potatoes to the pot.

Add roasted garlic and butter. Mix with a potato masher or electric mixer. Slowly add enough milk until desired consistency is achieved. Season with salt and pepper.
