Roasted Garlic Chicken Pizza
An entirely new dimension on pizza.
Ingredients:
1 whole, large bulb of garlic
1 Tbsp. olive oil
1 4-ounce can tomato paste
2 cups grated mozzarella cheese
½ large red onion sliced
½ cup cooked cubed chicken
4 Tbsp. chopped fresh basil (or 1 Tbsp. dried)
1 prepared 12-inch pizza crust
Directions:
Prepare the garlic in the Garlic Express according to directions, or bake in the oven: Remove the outer papery covering. Slice ¼-inch off the top of the garlic bulb, exposing most of the cloves. Place in a small baking dish and drizzle with olive oil. Cover with foil and roast at 425 degrees for about 45 minutes, or until garlic cloves are soft.
Using fingers, squeeze the paste from the garlic cloves into a bowl. Add the can of tomato paste and mix together until well blended.
Spread garlic-tomato paste mixture on the pizza crust. Top with mozzarella cheese, red onion and cooked chicken. Sprinkle with 2 Tbsp. basil.
Bake pizza at 425 degrees until crust is golden brown and cheese bubbles, about 8 minutes. Transfer to cutting board. Cool 5 minutes. Sprinkle with remaining 2 Tbsp. basil. Cut into wedges and serve.
