Richard’s Favorite Shortbread
Simple and effective.
Ingredients:
1¾ cups flour
4 Tbsp. sugar
1 tsp. farina (Cream of Wheat)
Pinch salt to taste
½ cup (1 stick) butter
1 egg yolk, beaten
2 Tbsp. milk
Vanilla Sugar (see below)
Directions:
Sift together the flour, sugar, farina and salt in a large bowl. Cut the butter into cubes and mix into flour until crumbly. Make a well in the center of the dough and pour in the egg yolk and milk. Work into a smooth dough.
Transfer the dough to an 8″ cake pan and spread it evenly out to the sides. Crimp the edges with a fork and mark into slices. Prick the dough with a fork. Chill in the refrigerator for 30 minutes.
Heat the oven to 300 and bake for 30 minutes. The shortbread should be a pale golden color. Remove from the oven and cut into slices while still warm. Sprinkle with vanilla sugar before serving.
VANILLA SUGAR
Flatten 4 plump, moist vanilla beans. Cut lengthwise and scrape out the seeds (reserve for other recipes). Put the pods in a jar, fill with sugar and seal. Store for several weeks until the sugar has absorbed the vanilla. Use vanilla sugar in coffee, desserts and candy.
