Roasted Garlic Salad Dressing

A delicious use for roasted garlic.

Ingredients:
1 whole garlic bulb
3 Tbsp. balsamic vinegar
1/3 cup olive oil
½ tsp. Dijon mustard
½ tsp. salt
½ tsp. freshly ground black pepper

Directions:
Prepare the garlic in the in the oven: Remove the outer papery covering. Slice ¼-inch off the top of the garlic bulb, exposing most of the cloves. Place in a small baking dish and drizzle with olive oil. Cover with foil and roast at 425 degrees for about 45 minutes, or until garlic cloves are soft.

Squeeze cooked cloves into a blender or food processor. Add remaining ingredients and blend until smooth. Serve on your favorite salad greens.
