Pepper Cheesecake
A great way to make an impression with this unique cracker spread recipe.
Ingredients:
1 8 oz. pkg. cream cheese, softened
4 oz. pepper jelly
5 oz. grated sharp cheddar cheese
1 egg
Directions:
Mix all ingredients together and pour into a greased 6-inch springform pan. (I also use an 8-inch pottery pie dish.) Bake at 350 degrees for 35–40 minutes until the mixture is soft in the middle and brown on the edges. Chill thoroughly.
Transfer from the springform pan to a serving plate. (This is where my pottery baking dish is really good, since it also works as the serving plate!) Just before serving, spread a couple of teaspoons of additional pepper jelly evenly over the top of the cheesecake. Serve as a spread on crackers. Cheesecake can be made ahead of time and stored in the refrigerator until ready to serve.
