Ingredients:
Green lettuce (enough to fill a large salad bowl)
1 or 2 pink grapefruits, peeled and with pith removed, and separated into individual sections
1 or 2 large carrots, grated (medium grate)
Handful of dried cranberries
Handful of sliced, toasted almonds
Handful of cilantro (optional)

Directions:
Mix all ingredients; dress with any favorite vinaigrette
