Guilt-Free Stir-Fried Rice

This is a great way to use up leftovers!


Ingredients:
2 tsp. olive oil
1 green onion, sliced thin
½ bell pepper, chopped
1 carrot, julienned
1 clove garlic, minced
1 Tbsp. low-sodium soy sauce
¼ tsp. pepper
2 cups brown rice, cooked
1 egg, lightly beaten
Spoonful of fresh parsley, chopped (optional)
2 servings of shrimp (about 20-24), cooked, thawed, tails removed

Directions:
In skillet on medium high heat, heat oil until hot. Gently stir in onion, pepper and carrot. Sauté one minute, then stir in garlic, soy sauce, pepper and rice. Sauté until rice is lightly browned. Stir in egg and parsley and sauté until egg is cooked. Lower heat, stir in shrimp and stir until shrimp is heated through.

Serves four. Contains 360 calories per serving.

NOTE: Leftover cooked chicken or beef can be used in place of shrimp and is just as tasty. Use any vegetables you like — broccoli or snow peas are also good.
